Description
Do you remember the last time you tried something for the first time? The slight excitement and initial confusion of your taste buds? That is what you can expect from our Ana Sora—it reminds us of jasmine tea with blueberry and peach notes. And all of that from a coffee cherry. We source the coffee we need from the Ana Sora Washing Station, located in the famous coffee-growing region of Guji, which is known for its fantastic coffees.
This coffee is perfect for coffee lovers looking for a unique and unforgettable taste experience and wanting to discover the coffee’s country of origin.
As is customary in Ethiopia, the coffee does not come from a single farm but from cooperatives—in our case, the “Ana Sora Washing Station,” founded by Isreal. It is located in the Guji region, famous for coffee cultivation. For years, some of the country’s finest coffees have been grown here at elevations of up to 2,350 m and across around 250 hectares, in the shade of banana trees and leguminous plants.
The extreme altitude and long drying times produce particularly sweet coffees with a unique floral flavor profile. The beans are hand-picked and then naturally dried on raised beds in the sun, allowing them to develop their characteristic aroma and floral flavor profile. The coffee has an intense, fruity taste with notes of jasmine tea, blueberry, and a hint of peach.
Because processing would be far too expensive and labor-intensive for individual smallholders, Isreal founded the “Ana Sora Washing Station” as a cooperative. He not only oversees the construction and operation of the washing station and drying beds but also supports the region through training. At the nearby “Yerba Buleye” school, he teaches the children and the farmers of tomorrow how to grow coffee sustainably and run profitable agricultural operations.
The washing station also creates many jobs in the region. It is important to him that all workers are certified in coffee cultivation through a training program and officially registered. To combat corruption in the country, everyone receives their wages at the farm’s government-supervised security house, ensuring that they are always paid fairly.

Coffee is art, and so is our packaging. The artwork on our packaging comes from Theresa Kallrath (@theresa.kallrath): Theresa Kallrath creates loud, multilayered, abstract, large-scale works of art. She works without the color black in each of her paintings. It is almost ironic that our filter coffee shows how colorful black coffee can be in terms of flavor.

Preparation instructions

Extraction time: 2:30 min
Water volume: 250 g
For a great result in the cup, we recommend using a Hario V60 pour-over or a Kalita Wave. A scale with a stopwatch will also make preparation much easier. Of course, you can also use a standard kitchen scale and your phone’s stopwatch.
STEP 01
Heat your kettle with at least 350 g of water. If you can set the temperature, set it to 94 °C. If it does not have a temperature setting, let the water cool for 2 minutes after boiling.
STEP 02
Insert your paper filter and rinse both the filter and the vessel, such as a glass carafe, with the heated water. This prevents the taste of paper from ending up in the cup and preheats your equipment. Then pour the water away.
STEP 03
Grind 16.5 g of coffee at a medium/slightly coarse grind size (a little finer than sea salt) and fill the pour-over.
STEP 04
Pour approximately 50 g of water over the coffee grounds in circular motions and let it bloom for 30 seconds. This allows the coffee to degas.
STEP 05
Now pour in another 100 g of water in circular motions and let it drain until approximately 1:30 min.
STEP 06
Pour in another 100 g of water in circular motions. This brings the total weight to 250 g, and the water should have drained through in approximately 2:30 min. If the time is longer or shorter, adjust the grind size next time (too long: coarser; too short: finer).
STEP 07

Tip: Don’t drink it too hot; let it cool to approximately 60 °C and enjoy it at your leisure.
